At Cut Meat Creek Custom, we’re launching a mobile butcher shop to empower small producers and families in central South Dakota. In a state where local meat processing options are limited, our mission is to deliver stress-free, high-quality solutions right where your animals are raised, supporting local agriculture and strengthening our community.

Frederick Leader Charge, our owner-operator, was inspired by a “Dirty Jobs” episode to bring this vision to life. Born and raised on the Rosebud from the Wososo Wakpala, Fred understands the need for accessible, reliable meat processing in South Dakota. A veteran of the 101st Airborne Division with two deployments, he spent 13 years traveling for work before returning to serve our community with dedication and grit.

Brooke, Fred’s wife and our social media manager, was born and raised in Mosher, South Dakota, and shares a deep connection to our region’s agricultural roots. As an ER nurse, she ensures our operations comply with all regulations while keeping you connected through social media. Together, they’re committed to making Cut Meat Creek Custom a trusted partner for local producers.

Our state-of-the-art mobile harvest trailer, designed to meet strict regulatory standards, and our processing shop, equipped with cutting-edge equipment and work surfaces for wet and dry aging, ensure top-quality results. We offer:

•  Onsite harvesting for up to 10 beef or bison, reducing animal stress and travel.

•  Transparent splitting and hanging weight verification for peace of mind.

•  Premium wet and dry aging, onsite processing, and freezing in our modern shop.

Our trailer and shop are under construction, but we’re excited to bring this service to the Rosebud, Mosher, and beyond.
